Breakfast Blend Shortbread Cookies

  • 1 cup cold butter, cut into small pieces
  • 2/3 cup sugar
  • 1/4 teaspoon salt
  • 2 1/4 cup all purpose flour
  • 2  tablespoon Berres Brothers Breakfast Blend Coffee
  • 1 tablespoon ground cardamom
  • 8 ounce dark chocolate chips
  • 1 tablespoon Berres Brothers White Russian Coffee
  • 2 tablespoon vegetable oil
  • 2 ounce white chocolate chips
  • 1 teaspoon vegetable oil

In a large bowl combine sugar, butter and salt. Mix until combined.

Mix in flour, coffee and cardamom until dough comes together.

Pull the dough together with your hands and set on a floured surface. Roll out to about 1/4 inch thick.

Cut out using cookie cutters. Transfer to parchment lined cookie sheet.

Bake for about 10 minutes.

Let cool slightly before transferring to a cooling rack.

Put dark chocolate, coffee and oil together in a dish and microwave for about 30 seconds. Stir and heat again for 30 seconds more. Stir till melted. Do the same for the white chocolate.

Dip half of each cookie in dark chocolate and let excess drip off.

Take a plastic bag and place white chocolate in. Cut off a tiny corner and drizzle over dipped side of cookie. Set on parchment paper to harden.
