Rum and Coffee Ribs Smoked Over Coffee Beans


Ingredients:
  • 3 each  Racks of Pork Loin Backribs
  • 1 cup  Rum and Coffee Liqueur
  • 1 cup  White Sugar
  • 1 tablespoon  Salt
  • 1 1/2 tablespoon  Black Pepper
  • 3 tablespoon  Smoked Paprika
  • 1/2 teaspoon  Cayenne Pepper
  • 6 each  Garlic, Cloves, Minced
  • 1 cup  Berres Brothers Coffee Beans

Directions:
Trim excess fat from ribs.

Prepare the marinade, combine all ingredients except ribs and coffee beans, and rub special mixture over ribs.
Cover ribs and refrigerate for at least (5) hours.

Heat grill to medium temperature. Once grill is hot, place ribs on high rack if using gas or indirect heat if using charcoal. Turn ribs every 15 mins for an hour, every now and then throw coffee beans* onto the burners/coals, and then begin basting with our Coffee Barbecue Sauce.

Cook ribs until they are tender, but not falling off the bone.

*Note: soak the coffee beans in liquid before adding to the grill.
