Ingredients:

Prime Rib roast, about 6 - 8 lbs.

red wine
- 1/4
cup
olive oil
- 4
garlic cloves, finely minced
- 1
tablespoon
Berres Brothers Merlot Beef Rub
- 1
tablespoon
Brown Sugar

Directions:

Combine wine, olive oil, garlic, spice rub and brown sugar. Pour over roast and seal in large bag. Turn several times to coat thoroughly. Refrigerate 2 - 4 hours or overnight.
Heat oven to 400 degrees F. Put roast on a rack inside large shallow pan. Sprinkle with additional spice rub. Cover tightly with foil. Roast 45 minutes. Reduce heat to 325 degrees and remove foil. Continue roasting to 155 degrees for medium rare, about 1 - 1/2 hours longer. Remove from oven and cover loosely with foil. Let stand 15 minutes before slicing.
